(OT) Phone/Internet options in OZ

My wife and I are going to Australia next month.  What options
are available for my iPhone 6 Plus and iPad?

We will be staying with friends in Sydney and Brisbane before
going to Darwin so Internet connections will be OK until we get
to Darwin and Kakadu.

Any suggestions welcome, including possibilities of meeting
Linux folk while there.
