Linux Scan / OCR packages

Hi Guys,

I am wondering if anyone can recommend a scan / OCR package for modern
GNU/Linuxes (Fedora 21) that does a convert from image (Tiff/PDF/PNG/JPEG)
and OCR to Searchable PDF

I would like to completely digitize my $MOUNTAIN_OF_PAPERWORK while making
sure it's searchable in the future...

I have used some CLI stuff but I've found it steppy and largely a manual
process....

Ideally I would like something that could watch a linux folder for new
items and then spit the converted searchable PDF to a new directory....

Paying for something that Just Works™ would be fine....

Otherwise I've identified a market and we should go all github and create
something and make a fortune on it (doctor evil 1 million dollars style)....

Any ideas?
