I need a new server distro

Well it's unlikely I can go wrong by following advice from Bandel and 
Reinehr, so I'm off to download a Debian disk. Surely it can't be any 
worse than the torture ubuntu-server has put me thru the last few days.

How exactly does one make sure to get "testing" instead of anything 
else? I don't see different downloads for each.
