+1 for Debian.

I've been running three simple, non-graphical servers with Debian for 10+ 
years. You didn't say what you wanted to do with your servers, but Stable 
likely will meet your needs. Testing is 211 packages away from being released 
so install Squeeze now and upgrade to Wheezy in a few months (probably 3 - 6 
months to release). And, there's always backports until Wheezy is released.
