You need to look at Ubuntu *server*. The closest thing it has to "eye 
candy" might be some colorful settings for 'screen'. It's command-line 
only. Works great. There's a dedicated user's list for ubuntu-server 
where you can converse with the devs.

It doesn't have all the heavyweight enterprisey stuff you'd find in 
RHEL, but for most of us it is firmly in the "just works" category.
