We have several servers on Vmware ESX, and it's rock solid.

I just setup a Virtualbox (1.5.2_ose) on my sidux system. sidux has
good support for installing it and keeping it updated, and it seems to
be OK on the latest kernels. I put up an Archlinux and a Slackware
with no problems, but a Debian Etch install failed. I don't currently
have any Windows media, so I can't check that out. When I get a round
tuit, there's supposed to be a procedure to modify an installed
Windows (registry and drivers) to allow it to be copied to a virtual
instance. Not exactly the top of my priority list.
