And dinner to go with it.
Roast Duck with apricot sauce and potato medley.
Ingredients:
1-2 tsp thyme
salt and pepper
olive oil
1 large onion (may substitute 6 shallots)
1 can chicken broth ( may substitute 16 oz. wild game stock)
1/2 C. red wine
1 can apricots in light syrup
brown sugar (to taste)
1/2 tsp allspice
1 package chicken stuffing
3-4 white or red potato
1-2 yams
1/4 C apple sauce
1/4 C shredded cheddar cheese
asparagus in a microwave package
prepare duck:
thaw day before in refrigerator.
If there is a sauce packet in the cavity keep it.
defat duck, use a sharp knife and cut around skin on top of breast.
We want to leave this portion of the skin on to keep the duck from
drying out while roasting. Cut along bottom side of duck, we also
want to leave the bottom skin and fat. Pull and cut the center skin
away also removing any fat. Removing the leg and wing skin is optional.
I leave it as its just a bother to remove it.
Prepare stuffing mix as directed on box
Put duck in a small roaster pan
Rub oil on duck, sprinkle with thyme, salt and pepper
put 1/2 stuffing inside duck
pour in a dash or three of red wine
preheat oven to 375 degrees
roast duck for 1 1/2 hr.
prepare potato by microwaving
remove potato from skins
in two bowls mash potato with a bit of evaporated milk
mash 2 apricot halves in with yams
mash apple sauce in with white potatos
in a small bread pan put a bottom layer of remaining stuffing
in each half put the potatos
cover white potato with cheddar cheese
cover yams with 1-2 tsp butter
cover bread pan with tin-foil
after duck has roasted 1 hour put potatoes in oven
prepare sauce:
in a heavy bottomed sauce pan put in the remaining apricots
mash to a course texture
add juice from can, wine, allspice, broth, 2 tbsp sugar, chopped onion
add sauce packet from duck if there was one.
bring to low boil and then turn down heat until a slow bubble.
Stir frequently to prevent burning, continue until thickened.
Taste and add sugar until most of the tartness is gone.
After 1 1/4 hour remove roasting pan cover and spread some of the sauce
over the duck.
Finish roasting without the cover for the last 15 minutes.
Use remaining sauce to spread over duck, potato, stuffing or veggie while
on plate.
Microwave asparagus and cover with 1-2 tsp butter
Substitutions:
You may substitute almost any fruit for the apricots.
Raspberries or dark cherries are a good choice.
May use white or brown sugar.
You can use 2 cornish hens or a chicken instead of the duck.
Dont not skin hens or chicken.
Use a larger roasting pan and substitute a wild turkey
if turkey double potato portions and use a large bread pan
Any veggie for the asparagus.
Brussel sprouts go great with this.
