I've been using Bacula to back up a half-dozen or so PC's and three servers
for over a year now, but I haven't ever tried to use it for a DVD backup. I
do believe, though, that it _is_ working and being used by a number of
people. The mailing list is quite active and I'm sure the recent archives as
well as the documentation contain everything you would need to know to get up
& running. By the way, the developer has just released the latest version,
2.0 so you might check the dependencies for that. The person who packages
Bacula for Debian is active on the list so you might contact him as well.
As for maintaining two versions of dvd+rw-tools, one method might be to
download the source from the developer website (not a Debian package),
compile & install it in /usr/local. Another would be to down-grade to the
version you need to be compatible with Bacula, copy/move/rename the binaries
& then upgrade again.
This is all pretty sketchy. Let me know if I can help you with any more
