Ben,

I second this recommendation that you look at bacula. It's a great network, 
client/server backup application. Currently, backup to dvd is a bit of a work 
in progress, but I think by the next stable release, 1.40, (before the end of 
the year) it should be working pretty well. The mailing list is active with 
good support for new users. The are many, many sites using it for Windows 
backups--mostly Windows clients to Linux servers, but also many Windows to 
Windows backups.
