I've got Zion on my short list for next year, along with the rest of the 4 
corners area.  I was actually debating doing that area this year, but 
decided on the Sierras instead.

Yellowstone is also on my list, but that's a much longer drive, and is 
impossible/impassable in the winter months (90% of the park is closed due 
to snow, and I'm not a skier).
