Ubuntu: upgrade to Dapper crashed in the middle

I had great success with sendmail+spam-assassin+clamav+mimedefang when I 
was using Caldera OpenLinux-3.1. I believe I could repeat the whole 
drill in Ubuntu.

I had seen people requesting a mail server to regulate the target of 
messages based on originator. They wanted some people couldn't send 
messages to internet, while some couldn't send messages to a certain 
domain. How could postfix regulate that?
