I'm running AMD64 Debian, rather than 64bit Ubuntu, but I think the consensus 
is that, yes, 64bit Debian, either the plain vanilla version or the Ubuntu 
version, definitely is ready for production work. For what it's worth, my two 
dual-Opteron servers with AMD64 Debian have been up and running without a 
hitch for most of this year.

I just did a quick scan of the AMD64 mailing list and found only a few 
references to Ubuntu, specifically. This one, from last January, seemed the 
most informative:
