That depends on what program you want to use to read mail. Personally I
use the character mailer, mutt, which reads directly from my mail folders
using Maildir storage (e.g. mail is in the $HOME/Maildir directory, not in
/var/spool/mail or whatever).
Most of the GUI mailers expect to access the mail using either POP3 or IMAP
requests to a mail server. I prefer using IMAP which leaves the mail on
the server where it's accessible via webmail and from other systems.
