The simple solution to this is to add appropriate my_hdr lines to
your ~/.muttrc file.  The next two lines would set the From: and
Reply-To: headers:

my_hdr From: bill at example.com
my_hdr Reply-To: bill at example.com

You can also do very interesting things with the mutt_hooks options and
my_hdr (e.g. my normal From: and Reply-To: is bill at celestial.com, but for
this list ist's linux-sxs at celestial.com)>
