I think this is such an important thing you are doing for the kids !
When I was first starting out in system administration, it was
impossible to find a free solution (Internet connections back in 1996
were very expensive and I had no clue there was such a thing as Open
Source or Linux). Consultants and other professionals were willing to
help, but would charge way too much.
I think whichever distribution you choose will matter much, much less
than your willingness to help these people out. If I had somebody back
then to help me get familiar with an operating system -- any operating
system -- I would have been so grateful! And don't underestimate these
kids -- you may be pleasantly surprised to find one of them, one day,
running a major network !
BTW, I think your reasons for choosing CentOS are very sound !
