Sorry for jumping in so late ...
Now what I've done: I clicked on a sample log file attached to a message
in thunderbird. A dialog popped up asking whether I wanted to open it
with the default application (Nedit), from where I could change this to
my preferred one (kate). After making this permanent, I had a new entry
in Edit|Preferences|Attachments:
"Anwendungsprotokoll Open with kate"
and with the "Change Action" button I was able to change this to any
other editor, e. g. kwrite.
Now do you have anything similar in Edit|Preferences|Attachments?
Accordingly, in thunderbird's mimeTypes.rdf, there was a new entry
<RDF:Description RDF:about="urn:mimetype:externalApplication:text/x-log"
NC:path="/usr/bin/kwrite"
NC:prettyName="kwrite" />
BTW, I have found lots of useful information about this topic by
googling on "thunderbird (firefox) helper applications", esp. in Groups.
It seems (I faintly remember) that Mozilla had a GUI for changing MIME
types, but they abondened it in TB/FF for making things easier for the
masses ...
