Don't try recording directly to mp3. Record to wav and then encode to 
mp3. Too hard to fix any problems with the recording if you compress first.

I have two favorite recording apps:

'rec' part of the 'sox' package
'record' part of the 'xawtv' package

Then use 'sox' to do any manipulations including encoding to mp3.

These are all console apps and I've had better luck with them than any 
of the fancy gui apps. You can also run them with 'nice' to help avoid 
skips.

If for some reason a gui app is needed, Audacity is hard to beat. The 
visual nature of it can also help with any post-recording manipulations 
that need to be done.
