I've been experimenting with Debian for a couple of months now and, pretty
much, have decided to migrate all of my systems to it. As you mentioned,
I'm thinking of using Debian 'stable' on my two servers and Debian
'testing' on my half-dozen desktops.
Debian seems a little more difficult, and takes a little longer, to
install, but once installed the advantages are manifold. There are plenty
of Debian packaged applications. They are easy to install & configure. And
updates are a breeze. (So far, at least.)
Plus, I like the control that using Debian affords. I can start with a
very lean, text-based system and then add only the libraries and
applications that _I_ actually need and want.
Finally, being a non-commercial distribution, it's much more oriented
towards providing what is needed as opposed to what is profitable. (Don't
get me wrong, I'm a businessman and love profits. But, while commerical
distributions come and go, or desperately cling to life -- a la Scodera --
Debian seems to roll on.)

PS Knoppix is a great compliment to a Debian installation. I use it to
identify hardware components & drivers, to ease the install, and as an
emergency boot disk, when I've screwed up grub!
