I wound up getting her the Fuji FinePix S5100 kit from Sam's Wholesale.
Contains the camera, bag, a rechargable battery kit.

It uses AA and the xD Picture card along with a USB adaptor.

Seemingly it has one of the better RAW imageing.

However,Fuji images are rotated 45 degrees
This is because interpolation artifacts are more noticeable along orthogonal edges than 
diagonal ones. Thus Fuji decided to rotate the pixel array 45 degrees, to favor orthogonal 
edges. You must rotate the output back to normal.

It also seems Fuji is fairly well support under *NIX.
