As Bob pointed out, a command-line scanning utility will do the trick. 
Most will support enough command-line flags to let your Unix filepro 
program specify all options for the scan (filename, format, resolution, 
etc.). Google for "command line twain scanner" and you will see several 
options.

You'll still have to install new software at each seat.  If a utility 
that is cheap or free will work for you, fine, otherwise you may not be 
gaining much over switching to Anzio.
