I've been using an Epson Expression 1680 with a USB connection to my Linux
desktop for several years now and it works perfectly.

No, scanners don't do a very good job as printers. Printers work much better
as printers.
Seriously, USB scanners work perfectly well with Linux. Check out the SCAN
project: http://www.sane-project.org/

standardized access to any raster image scanner hardware (flatbed scanner,
hand-held scanner, video- and still-cameras, frame-grabbers, etc.).
