For the screencasts I have done, I've used vnc2swf, which as the name
implies, records a VNC session and produces a flash movie.    It can also
do a VNC recording in which case there are other tools for converting from
VNC to other video formats.  Recording from VNC has the advantage of
working on any platform that can serve VNC.
