I had a large cook-off last weekend. Chicken hind quarters at 29 cents a
pound in a 10 pound bag. I let them get good and thawed out. Then I open
a corner of the bag, drain out the nasty water, put in some fresh with
salt, juice of an orange, a lemon and several limes. Sometimes I toss in
a beer. Some garlic and oregano. Let it all just marinade for as long as
I want.
Then, I fire up the old trusty cheap Brinkman smoker with a heaping pan
full of charcoal, toss in some soaked mesquite chunks, then place all of
the chicken on the racks, cover it up and go away. Several hours later,
stir up the charcoal. Add some more if necessary for the heat. Go away.
After about 4-5 hours or so of smoking, it's ready. I freeze a bunch of
it for later. No sauce... serve that on the side. So, in my bathrobe,
waiting for the money to show up, smoking little cigars, surrounded with
Chocolate Labs puppy eyed , I had me a plate of some of that chicken. No
veggies, no beans, no salads. Just chicken and a little sauce sitting on
the side. Whatever landed on the bathrobe, I'd save for later. <wink> No
woman would put up with this for long... nosirree. So, I'm enjoying it
while it lasts. Yessss... nappie time, too. Ric
