How can I change the onwership of a complete directory .... I have tried!

I just updated to Sus 10.1 and had backed up my .evolution directory onto cd

I attempted to copy it back using my user account and it would not copy so I 
tried it as SU and it worked fine

Then I tried to run Evolution and what a mess it said the permissions were all 
wrong

So I attempted to go into SU and change the properties and it wouldn't let me 
in the gui so I went to the command line using

example:

chown mike .evolution

chgrp users .evolution

It changed the folder but not the contents

So I opened the folders and used

chown mike *

chgrp users *

It worked to but if I have to go to each directory to do this I'll be here all 
month

Is there a command that will drill down and change all them at once ... I 
can't find it in any of my manuals.
