[ubuntu] aptitude and unwanted upgrade

Mine all do. Not sure what happened to yours.
Try mv /boot/grub/menu.lst .
then update-grub
Then go through the generated menu.lst and make it look as it should (best to
edit the defaults which are single-commented with one "#"... It's pretty
self-explanatory.
As for the kernel issue, I typically use Synaptic. I would try "Force
Version" on the installed kernel
