Yes you can do this I had a Suse box setup with netatalk and it worked 
fine with OSX.  You can also do NFS, Samba and DAV.  OSX also mounts 
FTP shares on the desktop with no problem.  Since its easy to start FTP 
on the linux box and the FTP shares will appear on the OSX desktop it 
will accomplish the task with the least amount of work.

NFS shares did appear on the desktop for me since I had to mount them 
from the terminal.  SAMBA, DAV and FTP will appear on the desktop and 
can mounted using Finder.

You can also use Apples X11 to get the Linux box's X windows apps 
running on the Mac.
