What arch to specify for a XEON system?

I wound up with a dual-XEON on my desktop, and I'm acutally a bit
baffled by the machine.  I'd like to do compilations that take
advantage of the architecture, but I'm unsure what to tell
gcc, whether this is a i868 for RPM purposes, what to tell gentoo
(I'm thinking of migrating there from RH 7.3 and RH 9.0).

The OS I'm running now is generic i386, which seems underkill for
a dual XEON (4 hyperthread) setup.

Advice?
