There are a couple of reasons why not. One is if your staff only has
experience with RPM-based distros. Debian is a bit of a shift, and
unless you've got a staff that has switched distros before you're bound
to lose a certain amount of productivity until they get it figured out.
Whether or not that's worth it to you depends on your environment. The
other reason is that commercial software vendors generally do not
support Debian. The software may work (LSB has done good things for
cross-compatibility) but if you call them for support they're not going
to help you. In some environments that may not matter, but in others it
can be a real show-stopper.
These aren't problems with Debian, but they are reasons why shops won't
switch.
