IRC - my ignorance is showing

I now have a total of about 48 hours on IRC, using xchat (or xchat-2 to be
exact).  I just never got a round-2uit before now.  Not knowing what I am
doing, other than exchanging info with some nice folks (and, as always, some not
so nice, ranther cranky folks), I have a couple of questions:

1. How do I wind up with multiple xchat tabs open?  Not any intentional action
on my part.

2. When the channel opens, it tells lots of information about plugins.  Why
would I want plugins?  What do they accomplish that replying to conversation
threads do not?
