All you need to edit is a single file for each interface:
/etc/sysconfig/network-scripts/ifcfg-eth0
/etc/sysconfig/network-scripts/ifcfg-eth1

Remaining determined to depend on a gui will always leave you stuck when
the GUI isn't available.
