FreeS/WAN is the one I've chosen to spend my time on.  Why?  It is (theoretically) not a Linux-only solution, and has flexibility and power, as well as IPSEC being well-known through the Internet and a mandatory piece in the IPv6 spec...
IPSEC is available in some fashion on BSD (and other Unices), Cisco,  LinkSys (but then I said that already :) , NetGear, and many others.

I share both NCP and SMB shares (which are just grafted into my server's filesystem) through SMB.  It works great.  I can't help you on the NFS solution, since I have never actually run it.
