Please define "night." In my environment, "night" is broad daylight
for half of the people whaling on my servers. The point being that there's
no "best" time for upgrades as defined by usage. We simply notify users
ahead of time of planned downtime if we can't slipstream the update or
switch to a redundant service on another system.
